IN: Veal Herb Schnitzels

My crispy Veal Schnitzel! 
So.... I LOVE Veal!! My favorite veal dish is veal scallopini, which I also have a great recipe for! But this is all about my newest recipe "Veal Schnitzel" the crumb is so tasty with all the herbs and Parmesan cheese. The meat is  super tender and the outside is crispy! It is delicious, but don't take my word for it, make them yourself!

Ingredients:

6 veal steaks (make sure they are thin)
4 eggs
2 cups bread crumbs
1 cup fresh great Parmesan
Herbs: thyme, rosemary
1 tbsp minced garlic
Salt and pepper
Olive oil for frying


Create: 
In a bowl beat the eggs and add the garlic, season with salt and pepper and add a pinch of the herbs. Once combined, toss the veal fillets in the mix and let them coat in the egg for about 30 mins

In the mean time get a new bowl and pour in the breadcrumbs. Add the cheese and herbs and season with salt and pepper. Mix all ingredients until evenly combined.

Grab a piece of the egg coated veal and place into the bread crumbs. Coat both sides with the crumbs and push down hard the crumbs stick. Repeat for all the veal.

Now add the oil to your fry pan, enough to shallow fry the veal in. In batches of 3 (depending on the size of your pan) on medium heat, fry the veal. This should only take 3 minutes both sides. You will know the vela is done once the crumbs look golden crispy. 

Allow veal schnitzels to cool down for a couple of minutes and then sprinkle with salt and pepper if desired. 

I have this with a side salad and also like to squeeze some fresh lemon on top of the schnitzel! DELICIOUS! I hope you love the easy Schnitzels as much as i do :)
