IN: Chicken & Vegetable Soup

My chicken and veggie soup 
So I know it's the start of spring and most of us associate chicken and vegetable soup with winter, but this soup is tasty and valid all year round!

This is a simple chicken and veg soup i created myself, you can add any veggies and herbs you like! Below is my SIMPLE yet delicious recipe for you :)







Ingredients: 

1 whole chicken
3 large carrots
1 leek
1 brown onion
3 spring onions
1 tbsp chicken stock
1 tbsp vegetable stock
olive oil
handful of continental parsley
Herbs: 2 bay leafs, rosemary, thyme, garlic salt, black pepper (Use as much as you like)

Create: 

Place whole chicken in a large soup pot, add all herbs, add enough water to make sure chicken is covered and let it boil

Meanwhile, prepare all veggies - cut, dice, slice however big or small you prefer

Add veggies to fry pan with a dash of olive oil
and cook the veggies down until soft

Once the chicken is boiling, reduce to a low simmer and add the sauteed vegetable. Cover with lid and allot to simmer for 2 hours

Remove chicken from pot and allow it to cool down, once the chicken is cool remove skin and pull apart the chicken from the bones. Shred with a fork and then discard bones and skin. Place shredded chicken back into soup and mix into the liquid 

Season to taste with salt and pepper and garnish with chopped fresh parsley
