IN: Puglia inspired Crispy Skin Salmon


Last night I went searching through the fridge to decide what I would cook for dinner. I had some salmon, tomatoes, anchovies, capers, butter and white wine and decided to get a bit creative. I had recently read a cook book by a mum who was inspired by the food of her hometown Puglia and was amazed by the simple yet mouth watering meals she has created. 

Puglia is a southern region forming the heel of Italy’s “boot,” is known for its whitewashed hill towns, centuries-old farmland and hundreds of kilometers of Mediterranean coastline.

The dish took about 20 minutes from start to go and I promise that you will not be disappointed by this effortless and DELICIOUS salmon dish. ENJOY!! 


Ingredients:

2 salmon fillets (skin on)
5 baby tomatoes (I used grape tomatoes)
1 teaspoon capers
1 teaspoon garlic
3 anchovies
1 tablespoon butter
1 teaspoon parsley flakes
olive oil
splash of white wine


Method:


Preheat oven to 200 degrees (fan forced)

Pat down skin side of salmon fillets until dry and sprinkle with salt 

In a fry pan add olive oil and set flame to high

Once the pan is hot, but not smoking, add the salmon fillets skin side down, leave on the pan until the skin is crispy (about 4-5 minutes. Move the salmon around a couple of times so the skin doesn't burn and stick to pan)


Once the skin is crispy, transfer the salmon skin side up onto a baking dish with some drizzled oil on the base (I used ceramic) and set aside for the time being


Return to the fry pan and turn the flame to medium heat. Add the anchovies and fry until almost dissolved. Add capers, garlic, butter, parsley and tomatoes. Splash in a little bit of oil and start to simmer all ingredients until tomatoes soften (about 3 minutes). Add a splash (or 2) of the white wine. Increase the heat and bring to a quick boil. Once the wine has boiled pour all ingredients over the salmon on the baking tray and place in the oven and cook for about 13 minutes. 


Once salmon is cooked, carefully transfer to serving plate and pour all  ingredients over the salmon and ENJOY!!
