IN: Dinner tonight... Had to share!
So I decided to cook some salmon for dinner tonight. Usually I just bake it with some lemon drizzled on top and maybe some chili flakes. This is always yum and so easy but tonight I put my thinking cap on and got creative! This crusted salmon is DELICIOUS and full of flavour, and if you cook it right... it will melt in your mouth!
Ingredients:
Atlantic salmon, continental parsley, pumpkin seeds, raw cashews, chili flakes, Coles brand rosemary biscuits, 2 beated eggs, flour to coat salmon in, olive oil for frying
Create:
First I blended a handful of cashews, handful of pumpkin seeds, 1 tsp chili flakes and about 7 rosemary biscuits using my nutribullet. You only need to pulse the ingredients together until they become crumbs
Separately pulse a good handful of parsley leafs or simply chop up finely
Mix the parsley with the crumbs
Coat the salmon in flour lightly an then in the egg and lastly press both sides of the salmon into the crumb mixture until both sides are covered
Keep in fridge for 1 hour
Heat a pan with some olive oil on high - place salmon in the pan and cook both sides until golden (This should only take around 2 minutes as the oil will be hot and you don't want to burn the herb crust)
Remove from pan and place salmon on a tray lined with baking paper
Bake on 160 degrees for about 9 minutes
RESULTS: A crispy herb crust on the outside and a tender pink salmon on the inside!
